Maple Syrup or Basic Pancake Syrup

2c. sugar (white, brown, or mixed)
1c. water
1t. vanilla
1t. maple flavoring (leave this out for basic syrup)

In a saucepan, dissolve sugar and water on medium-high heat.  Remove from heat and stir in the vanilla and maple flavoring.  Store in an airtight container in the refrigerator.
