Whole Wheat Pancakes (2 versions)

1 egg
1c. buttermilk
2T. cooking oil
1c. whole wheat flour
1T. honey
1t. baking powder
1/2t. baking soda
1/2t. salt
1/2c. applesauce

Mix dry ingredients together in a mixing bowl; then add buttermilk, oil, honey, applesauce, and egg.  Stir well.  Bake on heated griddle (medium heat) until lightly brown and bubbles form on top, then turn and cook until lightly brown on both sides.  Makes about ten 6-inch pancakes.

OR

1&1/4c. whole wheat flour
3t. baking powder
3t. brown sugar
3/4t. salt
2-3 egg yolks
1&1/4c. milk
3T. cooking oil or melted shortening
2-3 stiffly beaten egg whites

Mix dry ingredients together in a mixing bowl; then stir in egg yolks, milk, and oil.  Gently fold in egg whites.  Bake on griddle (medium heat) until golden brown and bubbles form on top, then turn and cook until golden brown on both sides.

Tortillas

3c. flour
1&1/2t. salt
1t. baking powder
4T. shortening, butter, or margarine

Combine ingredients in a mixing bowl.  Add a small amount of lukewarm water to moisten mixture.  Knead for 15 min.  Roll out dough in small amounts to form tortillas (make them about 4-5 in. across).  Use a hot griddle or heavy skillet (ungreased).  Do them fast; you will notice the color changing and a little brown will form here and there.  Test for doneness with fork.

*If tortillas come out too thick for your liking, you may add less of the baking powder or leave it out.

Cream Cheese Chocolate Chip Cookies

1c. shortening, butter or margarine
1c. cooking oil
2c. sugar
8 oz. pkg. cream cheese
4t. vanilla
4c. flour
2t. salt
1/2c. chopped nuts (optional)
1 lg. pkg. chocolate chips

Cream together shortening, oil, sugar, and cream cheese in a large mixing bowl.  Add vanilla, flour, and salt; mix well.  Stir in nuts and chocolate chips.  Drop by spoonfuls onto baking sheet and bake at 350℉ for 10-12 min.  These cookies freeze well.  Makes 6 dozen cookies.

Double Chocolate Snack Cake

1&2/3c. flour
1c. brown sugar
1/4c. cocoa
1t. baking soda
1/4t. salt
1c. water
1/3c. cooking oil
1t. vinegar
3/4t. vanilla
1/2c. chocolate chips

In a mixing bowl, combine flour, sugar, cocoa, baking soda, and salt.  Gradually beat in water, oil, vinegar, and vanilla.  Beat until smooth.  Pour into a greased and floured 8-inch square pan.  Sprinkle chocolate chips on top.  Bake at 350℉ for 35-40 min.  Cool and cut into squares.  Makes 6-8 servings.
