Mini Morsel Cupcakes


2&1/2c. flour
1/2t. salt
1&1/2c. sugar
2t. vanilla
4 eggs
1c. milk
2c. mini chocolate chips
Frosting: 
1/2c. margarine
2&1/2c. powdered sugar
1/4c. milk
1t. vanilla
1c. chocolate chips

Mix together the eggs, sugar, and margarine in a mixing bowl.  Add baking powder, salt , milk, and vanilla.  Mix well.  Stir in flour and chocolate chips.  Spoon batter into paper-lined muffin tins.  For best results, spray the muffin papers with non-stick spray.  Fill muffin papers until they're 3/4 of the way full.  Bake at 375℉ for 18-20 min. or until toothpick inserted into the center comes out clean.  

Frosting:
Melt chocolate chips in a saucepan over lowest possible heat.  When morsels begins to melt, remove from heat and stir.  Return to heat for a few seconds at a time, stirring until smooth.  Cool, then beat in margarine, powdered sugar, milk, and vanilla (one at a time).  Beat until smooth.  Frost cupcakes after they have cooled.

Mini Chip Snowball Cookies

A Nestle recipe

1&1/2c. softened butter
1T. vanilla
1/2t. salt
3c. flour
2c. mini chocolate chips
powdered sugar

Beat butter, sugar, vanilla, and salt together in a mixing bowl.  Gradually stir in flour and chocolate chips.  Shape into 1&1/4-inch balls (level tablespoon of dough) and place on an ungreased baking sheet.  Bake at 375℉ for 10-12 min.  Sift powdered sugar over hot cookies.

Chocolate Fudge Upside-Down Cake

From:  Yummly

3/4c. sugar
2T. butter
1/2c. milk
1c. flour
1/4t. salt
2T. cocoa
1/2c. chopped nuts (optional)

Cream together the sugar and butter.  Stir in the milk.  Add baking powder, salt, and cocoa--mix well.  Stir in the flour and nuts.  Spread batter into a well-greased 8-inch square pan.  Mix the following together in a separate bowl:

1/2c. sugar
1/2c. brown sugar
1/3c. cocoa

Sprinkle this mixture over the batter.  Pour 1&1/2c. boiling water over the top.  DO NOT STIR!!  Bake at 350℉ for 35-40 min.  Cool, then invert cake onto a cake plate.

Banana Mini Chip Bars


2c. flour
1/2t. salt
3/4c. margarine
2/3c. sugar
1t. vanilla
1c. mashed ripe bananas
1 egg
2c. chocolate chips
powdered sugar

Cream together the egg, sugars, and margarine in a mixing bowl.  Add the baking powder, salt, vanilla, and mashed bananas.  Mix well.  Stir in the flour and the chocolate chips.  Pour batter into a greased 15x10-inch pan.  Bake at 350℉ for 20-30 min. or until toothpick inserted into the center comes out clean.  Cool and sprinkle with powdered sugar.

Reese's Cookies

A Hershey's recipe

2c. flour
1c. shortening or 3/4c. margarine
1c. sugar
1t. vanilla
2 eggs
1c. peanut butter chips
1c. chocolate chips

Cream together the shortening, eggs, and sugars.  Mix in the baking soda and vanilla.  Stir in the flour.  Add and stir in the peanut butter chips and chocolate chips.  Mix well.  Drop by rounded teaspoons onto ungreased cookie sheet.  Bake at 350℉ for 8-10 min.  Makes 5 dozen cookies.

Granola Bars

3&1/2c. oatmeal
1c. chocolate chips
1c. chopped nuts (optional)
2/3c. butter or margarine
1/2c. brown sugar
1/3c. honey, corn syrup, or molasses
1 beaten egg
1/2t. vanilla
1/2t. salt

For crunchy granola bars:  Toast the oatmeal in an ungreased baking sheet in a  350℉ oven for 15-20 min.   Add toasted oats to the rest of the ingredients per instructions below.

Combine oatmeal (toasted or not toasted), egg, butter, brown sugar, honey, salt, and vanilla in a large bowl and mix well.  Stir in the nuts and chocolate chips; mix well.  Press firmly into a well greased baking sheet.  Bake at 350℉ for 20 min.

Hillary Clinton's Chocolate Chip Cookies

From former First Lady Hillary Clinton's recipes

1&1/2c. flour
1t. salt
1/2c. sugar
1t. vanilla
2 eggs
2c. oatmeal
12 oz. pkg. chocolate chips

Beat together shortening, sugars, vanilla, and eggs in a large bowl with electric mixer until creamy.  Beat in salt, baking soda, and oatmeal.  Gradually beat in the flour.  Stir in the chocolate chips.  Grease baking sheets with vegetable oil and drop batter by well-rounded teaspoonfuls onto baking sheets.  Bake at 350℉ for 8-10 min.  Makes 7&1/2 dozen cookies.

Chicken Adobo (Paprika Chicken)

10 chicken pieces
2t. salt
1/4t. pepper
1 bay leaf
1/2c. cider vinegar
1c. water
4t. paprika
3T. cooking oil
1/2t. garlic powder

Marinate chicken 30 min. in the salt, pepper, garlic, vinegar, and bay leaf mixture.  Drain and reserve marinade for later.  Heat oil in a saucepan over medium heat.  Brown chicken in the oil.  Add marinade and water.  Cover and cook over medium heat for 30 min. or until chicken is tender and almost all liquid has evaporated.  Stir in paprika.   Cook for 5 more minutes.
