Barbecue Chicken

1/3c. grated onion
3T. butter
1c. ketchup
2t. mustard
salt and pepper to taste
1/2c. vinegar
2T. brown sugar
1/2c. water
1T. worcestershire sauce

Stir all ingredients together in a medium saucepan and cook slowly on low heat for 15 min.  Place thawed chicken on the bottom of a baking pan.  Pour sauce over all pieces; be sure to cover each piece of chicken.  Cover with foil and bake at 325℉ for 1&1/2 hours or until chicken is cooked thoroughly.  Remove foil at least 10 minutes before serving.   Makes 7 servings.

Chocolatiest Cake

1 lg. box chocolate pudding mix (not instant)
6 oz. (1c.) chocolate chips
1 box chocolate cake mix

Prepare pudding according to directions on pudding box.  Stir dry cake mix directly into prepared pudding.  Pour into greased and floured sheet cake pan.  Sprinkle with chocolate chips.  Bake at 350℉ for not longer than 30 min.

Filled Cupcakes

1 chocolate cake mix
8 oz. cream cheese
1/3c. sugar
1 egg
6 oz. (1c.) chocolate chips

Mix cake according to directions; fill muffin tins 2/3 full.  Cream softened cream cheese with sugar; beat in egg.  Stir in chocolate chips.  Drop rounded teaspoonfuls of cream cheese filling on each cupcake.  Bake according to package directions.

Oatmeal Pancakes

1&1/8c. milk
1c. oatmeal
2T. cooking oil
2 eggs
1/2c. whole wheat flour
1T. honey or brown sugar
1t. baking powder

Combine milk and oatmeal in a mixing bowl and let stand at least 5 min.  Add oil and eggs to mixture; beat well.  Stir in flour, honey, and baking powder.  Stir until dry ingredients are moistened. Bake on hot (medium heat), greased griddle using 1/4c. batter for each cake.  When golden brown and bubbles form on top, turn over on griddle and bake until golden brown.  Makes 10-12 pancakes.
