Fat-free Cocoa Cake

1&1/4c. flour
1c. sugar
1/2c. unsweetened cocoa
1/4c. corn starch
1/2t. baking soda
1/2t. salt
4 egg whites
1c. water
1/2c. karo lite syrup (corn syrup)

Combine dry ingredients (flour, sugar, cocoa, corn starch, baking soda, and salt) in a mixing bowl.  Combine wet ingredients (eggs, water, corn syrup) in a separate mixing bowl.  Stir wet ingredients into dry ingredients until smooth.  Spray 9-inch square baking pan with non-fat cooking spray and pour batter into pan.  Bake at 350℉ for 30 min. or until toothpick inserted into the center comes out clean.  Cool.  Enjoy!

Chicken and Dumplings

From:  Kroger Original all purpose Baking Mix box
3 lbs. cooked chicken or turkey, shredded or cut into pieces
4c. chicken broth
1 can (10.5 oz.) condensed cream of chicken soup
1&1/2c. frozen mixed vegetables (thawed)
1 sm. onion, chopped
salt and pepper to taste
2c. baking mix (i.e. Jiffy, Bisquick, Kroger brand)
2/3c. milk
Heat broth in large pot over medium heat.  Add the cream of chicken soup and mix thoroughly.  Add chopped onion and mixed vegetables and stir.  Mix in chicken or turkey pieces.  Salt and pepper to taste.  Allow the mixture to come to a boil.  Meanwhile in a separate bowl, combine the milk and baking mix until a soft dough forms.  Drop dough by heaping tablespoonfuls onto boiling mixture to make approximately 10 dumplings.  Reduce heat to low and simmer uncovered for 10 min.  Cover with lid and simmer for another 10 min.  Remove lid and serve hot.  Makes 6 servings.  Refrigerate leftovers.

Crock Pot Beef Stroganoff

From:  Rival Crock-Pot:  Incredibly Easy Recipes

3 cans (10&3/4 oz. each) condensed cream of mushroom soup
1 cup sour cream
1/2 cup water
1 package (1 ounce) dry onion soup mix
2 pounds beef stew meat, cut into 1-inch pieces

Combine soup, sour cream, water, and soup mix in Crock-Pot.  Add beef; stir until well coated.  Cover; cook on low 6 hours or on high 3 hours.  Serve over cooked rice or noodles.

Crock Pot Potato Casserole (2 recipes)

Potato Casserole (Recipe 1)
From:  Crock-Pot:  Recipe Collection

*1 can (10 and 3/4 ounces) condensed cream of chicken soup, undiluted
1 cup (8 ounces) sour cream
1/4 cup chopped onion
1/4 cup (1/2 stick) plus 3 tablespoons butter, melted, divided
1 teaspoon salt
2 pounds potatoes, peeled and chopped
2 cups (8 ounces) shredded cheddar cheese
1 and 1/2 to 2 cups stuffing mix (optional)

 

Combine soup, sour cream, onion, 1/4 cup butter, and salt in small bowl.  Combine potatoes and cheese in Crock-pot.  Pour soup mixture over potato mixture; mix well.  Sprinkle stuffing mix over potato mixture; drizzle with remaining 3 tablespoons butter.  Cover; cook on low 8-10 hours or high for 5-6 hours or until potatoes are tender.
 

*(Tip: I've found you need more liquid or it burns on the edges.  Today I put in an extra can of cream of chicken, and it didn't burn.)

 
Cheesy Slow Cooker Potatoes (recipe 2)
From:  Rival Crock-Pot:  Incredibly Easy Recipes

1 bag (32 ounces) shredded hashbrowns
2 cans (10 and 3/4 ounces each) condensed cheddar cheese soup, undiluted
1 can (12 ounces) evaporated milk
1 cup chopped onion

 

Combine all ingredients in Crock-pot.  Cover; cook on low for 6-8 hours.

Hamburger Pot Pie

From:  Kroger Original All Purpose Baking Mix box

1&2/3c. frozen mixed vegetables (thawed)
1/2 lb. ground beef, browned and drained
1 can (10&3/4 oz.) condensed cream of mushroom soup
2T. chopped onion
1/8t. black pepper
1c. baking mix (i.e. Jiffy, Bisquick, Kroger brand)
1/2c. milk
1 egg
1/4c. shredded cheese 
1T. butter or margarine (melted)
1/8t. garlic powder

Stir together vegetables, cooked ground beef, soup, onion, and pepper in an ungreased 9-in. pie plate.  In a small bowl, stir together baking mix, milk, and egg; fold in cheese.  Pour over beef mixture.  Bake at 400℉ about 30 min. or until golden brown.  In a small bowl, blend butter and garlic powder; brush over top of baked pie.  Serves 4-6.  Refrigerate any leftovers.

Barbecue Chicken Pizza

From:  Kroger Original All Purpose Baking Mix box

1&1/2c. baking mix (i.e. Jiffy, Bisquick, Kroger brand)**
1/4c. hot water
1&1/2c. cooked chicken breasts, chopped or strips
1/2c. diced red or green peppers (optional)
1/4c. chopped green onions
1c. honey BBQ sauce
1&1/2c. shredded mozzarella cheese

In a medium-sized mixing bowl, mix baking mix, hot water, and oil until a soft dough forms.  Beat dough about 20 strokes.  Let dough stand for 8 min.  Meanwhile, in a separate bowl, combine cooked chicken, peppers, onions, and barbecue sauce and stir well.  Grease cookie sheet or 12-in. pizza pan.  Using hands dipped in baking mix, press dough into a 13-in. circle on cookie sheet, pinching up edges 1/2 in. or press dough into pizza pan.  Spread barbecue chicken mixture onto dough and top with cheese.  Place in oven on lowest rack and bake at 450℉ for 12-15 min.  Serves 4-6.  Refrigerate any leftovers.

Chicken Rice Casserole

1c. uncooked rice
4 oz. can mushrooms
1/2c. margarine
1c. evaporated milk
1 cooked chicken (about 3c. cooked, chopped chicken or turkey)
chicken broth
1/2c. flour
1t. salt
dash pepper
1/4t. turmeric
2T. dried onion flakes
grated cheese

Cook the rice and set aside.  Drain the mushrooms and save the juice.  Set aside.  Measure the chicken broth and mushroom juice to make 3 cups and set aside in a bowl.  Melt margarine in a large frying pan on low to medium heat.  Blend in flour, turmeric, salt, pepper, and onion.  Stir in broth (chicken broth and mushroom juice) and milk until thick and smooth.  Mix in chicken, rice, and mushrooms.  Spread in a 13x9-inch casserole dish and top with grated cheese.  Cover dish with foil and bake 20-30 min. at 325℉.
