Alaskan Yum Yums

1 lb. box graham crackers
2 sticks butter or margarine
1c. sugar
1 beaten egg
1/2c. milk
1c. graham cracker crumbs
1c. coconut (optional)
1c. chopped nuts (optional)
chocolate frosting

Cover 9x13-inch pan bottom with whole graham crackers.  In a large saucepan, melt butter (low to medium heat).  Stir in sugar.  In a separate bowl, stir egg into milk, then add to butter mix--cook until thick, stirring constantly to prevent burning.  Stir in crumbs, nuts, and coconut.  Spread mixture over layer of whole graham crackers in 9x13-in. pan.  Cool.  Frost with chocolate frosting.

Glazed Almonds

1c. whole blanched almonds
1/2c. sugar
2T. butter or margarine
1/2t. vanilla

Heat almonds, sugar, and butter in heavy skillet over medium heat, stirring constantly, till almonds are toasted and sugar is golden brown, about 15 min.  Stir in vanilla.  Spread nuts on a sheet of aluminum foil; sprinkle lightly with salt, if desired.  Cool; break into 2 or 3 nut clusters.

Sunshine Shake (Beverage)

1 qt. orange juice
1/2c. dry milk solids
1t. sugar
1t. vanilla
1 sm. can crushed pineapple, drained
2 bananas, mashed

Combine all ingredients in a blender.  Cover and blend at high speed until well mixed.  Serve over ice.

Peanut Butter Ice Cream Pie (with variation)

A Kroger Recipe

9-in. Kroger chocolate pie crust
1 qt. vanilla ice cream
1/2c. peanut butter
1/2c. whipped cream
crushed nuts (optional), chocolate graham cracker crumbs, chocolate syrup

Chill chocolate pie crust.  Place ice cream in a mixing bowl; stir just to soften.  Carefully fold in peanut butter and whipped cream.  Spoon ice cream mixture into chilled chocolate pie crust.  Garnish the pie with crushed peanuts or crushed chocolate graham crackers or both.  May also drizzle chocolate syrup over the top of the pie.  Freeze until firm (about 5 hrs.).  Remove from freezer 10-15 min. before serving.  Serves 6-8.

Tiki Burgers

1&1/2 lbs. ground beef
3T. ketchup
1/2t. pepper
1/2c. chopped onions
1/2c. bread crumbs
3&1/2T. soy sauce
1 can pineapple slices and juice

Mix beef, ketchup, pepper, bread crumbs, onions, and 2T. soy sauce together.  Marinate this mixture in the pineapple juice and remaining 1&1/2T. soy sauce (overnight).  Form beef mixture into hamburger patties and grill until cooked.  Serve with a slice of pineapple on bun.  Serves 6.
