Whole Wheat Honey Banana Muffins


1&3/4c. whole wheat flour
1/2t. salt
1T. wheat germ (optional)
1/2c. honey
2 eggs
1c. mashed bananas
1/4c. hot water
1/2t. cinnamon (optional)

Mix the eggs, oil, and honey together in a large mixing bowl.  Add salt, baking soda, wheat germ, cinnamon, and bananas.  Mix well.  Stir in flour and water.  Spoon into muffin tins, about 2/3 full.  Bake at 325℉ for 15-20 min. or until toothpick inserted into the center comes out clean.  Makes about 12 muffins.
