Oatmeal Cake

1&1/2c. boiling water
1c. quick cooking oats
1/2c. cooking oil, salad oil, or shortening
1&1/2c. flour
1t. cinnamon
1t. baking soda
1/2t. salt
1c. brown sugar
1c. white sugar
2 eggs

In a large bowl, combine oatmeal and boiling water.  Let stand for 1-2 minutes.  Then mix in the cinnamon, soda, salt, and sugars.  Add the eggs and oil and mix well.  Gradually stir in the flour, mixing it in well.  Spread batter into a greased 9x13-inch pan and bake at 350℉ for 30-40 min. or until toothpick inserted into the center comes out clean.  If spreading into a greased 11x15-inch pan, bake at 350℉ for about 20 min. or until done.  For frosting recipe, please see the Sauces/Frosting section on this site.
