No Bake Chocolate Cookies (or Bar Cookies)

2c. sugar
1 stick margarine
2/3c. milk
3c. oatmeal
1/2c. cocoa
1/2c. peanut butter (optional)
1t. vanilla
1/3-1/2c. chopped nuts (optional)
1/2c. coconut (optional)

Cook together and boil for 1-2 minutes the sugar, margarine, and milk--stirring constantly to prevent burning.  Remove from heat and stir in the oatmeal and cocoa.  Then mix in the peanut butter and vanilla.  Finally, stir in the nuts and coconut until ingredients are well blended.  For cookies:  Drop immediately onto wax paper by teaspoonfuls and let cool.  For bar cookies:  Spread mixture into a 9x13-inch pan and let cool.  For faster cooling, chill in the refrigerator.
