Banana Bread (from a baking mix and from scratch)

From:  Jiffy Mix

3/4c. sugar
1/4c. shortening
2 eggs
2c. baking mix (i.e. Jiffy or Bisquick)
1c. mashed ripe bananas
1/3c. nuts (optional)

Combine eggs, sugar, and shortening mixing well.  Stir in bananas.  Slowly stir in the baking mix and mix well.  Stir in nuts.  Pour batter into greased bread pan and bake at 350℉ for 55 min. or until toothpick inserted into the center comes out clean.  Let cool 10 min. before removing from pan.

From Scratch:

3c. flour
2t. baking powder
1/2t. baking soda
3/4c. (1&1/2 sticks) butter
1&1/2c. sugar
2 eggs
1/3c. dry milk powder
1/3c. water
2/3c. mashed bananas
1c. chopped nuts (optional)

In a large mixing bowl, cream the eggs, sugar, and butter together.  Add the baking powder, baking soda, dry milk, and water.   Mix well.  Stir in the mashed bananas and nuts.  Slowly stir in the flour and mix well.  Pour into a greased loaf pan and bake at 350℉ for 50 min. or until toothpick inserted into the center comes out clean.  Remove from pan and cool on wire rack.
